Mussel Linguine in Tomato Sauce

Ingredients:

  • 1 onion, sliced
  • 1 x 5ml spoon chopped garlic
  • 100g green beans, trimmed and halved
  • ½ x 5ml spoon dried chilli flakes (optional)
  • 100g cooked mussels (no shell)
  • 1 x 15ml spoon oil
  • 1 x 400g can chopped tomatoes
  • 200g linguine pasta

Serves: 4

Method:

  1. Prep the Ingredients: Peel and chop the onion and garlic. Trim and halve the green beans.
  2. Cook the Vegetables: Heat the oil in a pan and fry the onions for 6 to 8 minutes until softened. Add the garlic and optional chilli flakes, stirring for 1 minute.
  3. Make the Sauce: Pour in the chopped tomatoes and add the green beans. Bring to the boil, then reduce the heat and simmer for 5 minutes.
  4. Cook the Pasta: Cook the linguine in boiling water according to the packet instructions. When there are 3 minutes of cooking time remaining, take a ladleful of the pasta water and add it to the tomato sauce.
  5. Combine: Bring the sauce back to the boil, add the mussels, and cook for 5 minutes. Drain the linguine and toss it into the sauce, cooking over heat until the pasta is well coated.
